Like many of the world's great teas, Jasmine tea has its own creation myth. The story of Jasmine maintains that many centuries ago, a Beijing tea salesman named Chen Guqiu invited a tea master to his house to taste some tea with him. While they sipped their cups, the conversation meandered to the differences in tea preferences between northerners and southerners. Remembering that he had a bag of tea given to him by a young southern woman a few months earlier, Chen summoned a servant to fetch it and brew two cups, one for himself and one for the tea master. Once the tea was brewed, the men lifted the lids from their covered teacups and to their amazement, watched as the spirit of a young woman, clutching two jasmine branches, rose from the steam. The men were astonished.

    The tea master, not missing a beat asked the man if he���d done any good deeds recently. Chen then recalled that 3 years earlier, he had met a young woman at a hotel who had run out of money and whose father had recently died. At the time, Chen offered her some money to help pay for her room and board. Three years later, he revisited the hotel and was presented with a bag of tea along with a thank you note from the young woman. When he asked for her whereabouts, the innkeeper told him she had died the year before.

    The Tea Master, upon hearing the tale said, In my opinion, the heavens are telling you to start producing teas layered with jasmine. Chen took the Master's word, commissioned a batch of tea layered with jasmine and the rest, as they say, is history.

  • Hot tea brewing method: Bring filtered or freshly drawn cold water to a rolling boil. Place 1 slightly heaping teaspoon of loose tea, 1 tea bag or 1 Q3 portion control pack for each 7-9oz / 200-260ml of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea). Add milk and sugar to taste.

    Iced tea brewing method (to make 1 liter/quart): Place 6 slightly heaping teaspoons of loose tea, 6 tea bags or 6 Q3 portion packs into a teapot or heat resistant pitcher. Using filtered or freshly drawn cold water, boil and pour 1 cups/315ml over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the tea or removing the tea bags. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste. A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted with cold water. (Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about.)
