Here is an unusual but delicious combination celebrating mothers, the arrival of spring, and giving us an exotic lift with the flavors of rooibos and papaya.

We created this blend thinking of a Mom who always dreamed of traveling to distant tropical places but never had the opportunity. She loves green tea, strawberry, mint, and chocolate. So why not blend all of these together?  To surprise her we added the rooibos and papaya pieces round out the blend.

This tea is low in caffeine and refreshing, taken hot or cold. It is perfect tea to enjoy while spending time with your Mom watching a late afternoon sunset. The light will intensify the rich color of the brew.

    We used Sencha style green from Hunan, China and Rooibos from South Africa . It's a perfect match for the sweet flavor of strawberries,papaya pieces and fruity rooibos. Green tea forgoes the light fermentation process. The leaf is steamed after plucking, then bruised either by machine or by hand. After that it's pan or basket fired, leaving it with a distinctive glossy look and light sweetish flavor an almost perfect match for rooibos and the strawberry in terms of character profile.

    Blended together, the combination of strawberry flavoring,papaya. rooibos, mint, cacao nibs and green tea produces a cup that is light and fresh, tempered with delicate notes of juicy sweet strawberry, fruity rooibos and classic combination of mint and chocolate.



    Rooibos (Latin: Aspalathus linearis), the base of the blend, contains many essential and revitalizing minerals and is believed to be good for the digestive system. Cacao beans (Latin: Theobroma cacao), enjoyed for millennia, are particularly rich in calcium. All natural Peppermint (Latin: Mentha piperita), has traditionally been prized for its ability to cure upset stomachs, among other things. 

    The undeniably amazing taste and healthy qualities of this tea make it an excellent, calorie free, after-dinner digestif. Brew a pot after your next spicy meal and note how the tea, as you sip it, seems to have a wonderfully calming effect on your body.

  • Hot tea brewing method: When preparing by the cup, this tea can be used repeatedly - about 3 times. The secret is to use water that is about 180F or 90C. Place 1 teaspoon in your cup, let the tea steep for about 3 minutes and then begin enjoying a cup of enchantment - do not remove the leaves from the cup. Once the water level is low - add more water, and so on and so on - until the flavor of the tea and rooibos is exhausted.

    Alternatively as with all top quality teas, scoop 2-4 teaspoons of tea into the teapot, pour in boiling water that has been freshly drawn (previously boiled water has lost most of its oxygen and therefore tends to be flat tasting), steep for 2-4 minutes (to taste), stir (virtually all the leaves will sink), pour into your cup. 

    Iced tea brewing method (to make 1 liter/quart): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top up the pitcher with cold water. Garnish and sweeten to taste. [A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water.]
