Sun Tea is a great way to celebrate the summer!
Any variety of Oolong tea will make a good glass of sun tea. Cool water slowly draws flavor from the leaves. This is the opposite of hot water infusion, which rapidly pushes flavor out of the leaves.
The brewing method is very simple: For one cup use fifty percent more leaves than recommended in the hot water brewing instructions. For instance, put 2 teaspoons of Ti Quan Yin Oolong tea leaves in a 8 ounce glass jar, add cold water, put a lid on and set the jar in bright sun for a minimum of two hours. The sun tea is ready when you see a medium brown amber-like infusion. Remove the tea leaves, add some ice cubes and enjoy!
